How are you all? I hope you all are taking good care of yourself. Today I am here to share with you a famous vegan recipe from Bengal(Kolkata, India).
Before sharing the recipe, let me share with you a piece of small information regarding poppy seed.

(Poppy seed paste)

Benefits of poppy seeds:-

1.Poppy seeds are beneficial for those people who are suffering from breathing problems.

2.Poppy seeds also help to cure dry cough( we must take 1 tsp poppy seeds with coconut milk before going to bed).

3.Poppy seeds have an enormous number of fatty acids that helps to improve dry skin and helps to hydrate skin.

4.Poppy seeds contain vitamin B, fiber, omega 6 fatty acid.

I believe that is a piece of helpful information. Now let me share the recipe with you.


Ingredients:-

1.Potatoes- 2 pieces(cut into small square sizes).

2.Ridge gourd- 4-5 (cut in big square shape).

Spices:-

1.Poppy Seed paste - 3tbsp.
2.Green chili- 1-2 (whole) can adjust as per your taste.
3.Turmeric Powder- 1 tsp.
4.Sugar- 1 tsp.
5.Mustard Oil- As per need.
6.Red chili powder- 1/2 tsp.
7.Salt- To taste.


Method:-

(Making paste with poppy seeds and green chilis)

Step1- First, clean poppy seeds through a sieve and make a paste by adding green chilies. Keep aside in a bowl by adding a little water.

(Fried potatoes)

Step2- Place a wide mouth vessel on the medium flame. Now add mustard oil. Once oil becomes hot, fry potato pieces until golden.

(After adding water)

Step3- Now add ridge gourd pieces, salt, turmeric powder, red chili powder, sugar, and cook for a few minutes, then cover the vessel and lower the flame.

Step4- After 5minutes, remove the cover and give a quick mix. Then add poppy seed paste. Again stir for another 2-3 minutes. Adjust salt at this stage.

Step5- Add 1/2 cup of water, and again, cover the vessel for 2-3 minutes or until potatoes boiled well. Then remove the cover and mix all ingredients well. Turn off the flame.

(Ready to serve)

Step6- Transfer the curry to a serving bowl and serve with steamed rice.
