Greetings to all my gourmet friends here in #steemfoods especially to sir @alikoc07. This is the second day of the month and I do hope you are all having a great day today. I am @saneunji from the Philippines greeting you all a HAPPY HALLOWEEN. ๐ŸŽƒ๐Ÿ‘ปโšฐ๏ธ

Here in the Philippines we often celebrate this day remembering our departed love ones by going to the cemetery where we light candles and offer prayers for them but due to pandemic the government mandated that all of the cemeteries will be closed during November 1 and 2 to avoid gatherings. What we did was we stayed at home and cook a Filipino delicacy or also known as "kakanin" to offer it to our departed love ones which is part of the Filipino tradition.

Here I made this famous Filipino delicacy called " Biko " and I would gladly share how I prepared this easy recipe to all of you.

Biko is a type of sticky rice cake, otherwise known as kakanin. With a combination of coconut milk and brown sugar. This is a sweet dessert commonly prepared during special occasions especially this season.

Ingredients

Process

โžก๏ธ First, mix the sticky rice and water in a cauldron/rice cooker and cook until your rice is ready.

โžก๏ธ In a separate pan, combine 2 cups of coconut milk and 2 cups of brown sugar.

โžก๏ธ Cook on low heat and stir religiously until the texture thickens.

โžก๏ธ Add the cooked rice to the thickened coconut milk-sugar mixture and mix them well until the rice fully absorbed the mixture. Continue to cook it until all the liquid evaporates, but make sure not to overcook it.

โžก๏ธ Lastly, after the biko is fully cooked transfer it in a serving plate and consumed it while it's hot.

Biko is a lot like arroz con coco, "rice & coconut", in my country. We use the same procedure and ingredients + cinnamon (sticks and ground) and cane honey (papelรณn). It's always a pleausre to learn curiosities like this one. Best of luck with #club5050, @saneunji :D
