Greetings to you all.I have to present one of our native food in
the Eastern Part of Nigeria.
Tapioca is made from cassava and can be eaten with palm kernel, groundnut or even coconut.
HOW IS IT PREPARED
•Step 1
Harvest the cassava tuber.Peel it and wash it very well and cut it into moderate sizes.
•Step 2
Put it in a pot,add enough water and set it on the fire.Allow it to boil 10 minutes.
•Step 3
After boiling for 10 minutes.Bring it down and decant the water.Allow the boiled tubers to cool.
•Step 4
After the tuber was cooled to a reasonable temperature.Slice the tubers into desirable sizes.
•Step 5
Pour the sliced tubers into a pot of hot water.Stir intermittently and allow the water to cool.
•Step 6
Then wash it with cold water for three consecutive times.This is to eliminate the gummy nature of the sliced tuber.
•Step 7
After washing for 3 consecutive times.Soak it in cold water for 2 hours.
Now it is ready for consumption.It is now called a TAPIOCA. You can decide what to eat it with.You can enjoy TAPIOCA with dry fish,fried groundnut or coconut.
