Cooking is one of the things i love doing it has become part of me, i cook different meals for my family and am always making sure is healthy as well.
Am always ready to participate in courses that are about food because this helps me improve my food menu.
So this is another recipe from me to you rice and beans porridge.
my ingredients are:
• rice
• beans
• dried mackerel fish
• seasoning cubes and salt
• fresh pepper
• onions
• palm oil
• crayfish
Since am making porridge i used short grains rice because this rice gets softened fast i had to parboiled the bean for the first 15 minutes, beans takes time to soften so to parboil my beans and rice at the same time wont be a good idea.
After 15 minutes i added my rice to the beans and continue cooking for about 10 minutes till they become semi soft.
Now the both are equally semi soft but not totally softened, i washed and rinsed it twice then turn it back into my pot. I cleaned my mackerel chop some onions, blend my pepper and crayfish together now the main cooking has began.
I added some mackerel to the beans and rice added my chop onions then i go in with my seasoning cubes and salt to taste, i then added water to my ingredients and continue the cooking process note the water i added depends on how soft my rice and beans was.
Lastly after i allowed it to cook for few minutes i added my crayfish and pepper then i go in with my last ingredient which is oil and allowed it cook till done.
the outcome
Rice is a rich source of carbohydrates, it keeps the body energized and satisfied with many other health benefits.
Beans is protein, a nutrients that pay a key role in maintaining and repairing the body.
Now imagine having this two rich ingredients in one meal, very healthy and nutritious.
