Mango sponge cake!

My friends are in the month of the Father, to pamper them I have this recipe for a unique dessert, very tasty and I know what you like, and it is a delicious "Mango Sponge Cake"; This fruit is in season in Venezuela and many exquisite recipes can be achieved on the palate and with very few ingredients as you can see, I am already taking advantage of the harvest.

Ingredients for the sponge cake:

  • 2 eggs, 1/2 cup sugar, 1 cup flour, 1 ripe mango, 1 tablespoon of water.

Ingredients for the filling cream:

  • 1/2 cup of Water, 1 tablespoon of milk, and 1 tablespoon of Chantilly powder.

Preparation:

  • Separate the eggs and beat the whites very well to the point of sighing, we join them slowly adding half the sugar and then add the flour with enveloping movements.
  • Then pour the mixture into a previously greased mold and take it to the oven for 20 minutes, depending on the oven, until you see what is golden.
  • While we have the cake in the oven, we peel the mango, cut it into pieces and take it to the fire with a cup of water and the rest of the sugar, until making a syrup.

For the cream:

  • Prepare the milk and keep it in the freezer until crystallized, add the Chantilly powder and beat until creamy.
  • We divide the cake and fill with the mango, sprinkling it with the syrup, we put the cream and unite.
  • We refrigerate it for half an hour.
