To avoid accidents that could spoil the egg whites, they should be beaten in a clean, dry and fat-free container; In addition, the whites must be well separated from the yolks because, in case there are traces of yolk, these will never rise.
📌Once all the mixtures have been obtained, the next thing is to join the chocolate with the beaten egg whites; To do this, you have to add the chocolate to the whites and stir little by little so that the whites do not fall.
📌Done, what follows is to take this delicious mousse to the refrigerator for a period of 2 hours to achieve greater consistency.
📌Chocolate mousse is not made for heat; So if you expose it to very high temperatures, it will melt easily.
📌This basic mousse works perfectly to top cakes, but not as a filling.
📌If you really want to use the mousse as a filling, I recommend adding unflavored gelatin; in the same way with gelatin it can withstand higher temperatures.
📌When the mousse has reached the desired consistency, avoid handling it too much; this i can make it melt very easily.
