Rice & Beans with stew
Today I decided to share what I ate over the week. This dish is a dish that takes time to be prepared but its very delicious. Different people have different ways and methods of making their rice and beans. I sometimes mix the two but today, the spirit said I should do separate, so let's dive in.
The ingredients I used for this dish isn't much, so I would say it's a bit economical, just that prices of things has gone up causing things to be costly. What's needed are;
Beans
Rice
Palm oil
Onions
Pepper
Salt/Maggi.
- First, select the beans from bad ones, wash it and put in a pot of water, since beans takes longer time to cook, it's what I do first before going to prep other ingredients.
- I go ahead to wash and cut my onions, then wash and pound my pepper in the mortar rather than cutting it. I prefer it that way.
Set these aside, if you have two mouth gas cooker, you can simultaneously cook your rice on one side of the cooker, but since I have just 1, I'll patiently wait for the beans to be done before proceeding to rice.
When you feel the texture of the beans and it's soft, you add your pepper.
- Then add your onions
- Then add your palm oil
- What's next is your salt when it's boiling.
- Break in your Maggi and cover the pot to boil fully.
- The final result. The beans is ready but we got to fix the rice.
- In a pot of water, wash your rice and pour inside.
- When it's semi done, sieve it and wash it, pour it back inside the pot, add water and salt to taste and allow it boil and dry up.
- Then, dish the two inside a plate, I simply warmed my stew in the fridge and poured a bit on top and food is ready.

Healthy... Palm oil is extremely harmful to the environment and human health. Firstly, because it destroys the habitat of monkeys (Two species of orangutans - Sumatran and Bornean are on the verge of extinction) and due to the low price that keeps it on the market, it is responsible for atrocious deforestation and logging of tropical forests, leading to global warming. And as for child labor, I believe you are aware...! Secondly, because the human body is not adapted to absorb it, leading to obesity, diabetes, and cardiovascular diseases, including myocardial infarction. Think carefully about yourself and whether it is right to continue cooking with such fat. Best regards.
