Hello My Dear Little Witches
I grew up hating vegetables and the occasional fruit, thanks to my beloved Grandmother Pancha, who raised me by giving me daily creams of vegetables and natural fruit juices, it reached a point where I simply hated soups and all kinds of vegetables, it was not until I was 23 years old that for health reasons I had to adopt a vegetarian diet for at least a year. It was in this year where I was forced to eat all kinds of vegetables, vegetables and fruits, and it was by far the time I lost the most weight, it was about 14 kilograms less, about 30 pounds that I lost, I felt great. After that year I went off the diet and thanks to work and my pace of life I ate anything that fit my budget and was quick to continue with my work, which has translated into new health problems and a good amount of extra pounds that have cost me a lot to take off.
So for a little over a year now, I've been trying to get back to that vegetable-fruit and vegetable-based diet that worked so well for me, and it's been even more difficult than that time, because between the fact that many things I can't get in my country anymore, and the high cost of some others, it hasn't given me the desired results, but also thinking that more than aesthetics, this has to be a lifestyle, and these kinds of transitions aren't easy, especially when you have a lifetime of eating disasters. But although they are not easy, they are not impossible either, so little by little I have been adapting to this lifestyle, substituting food, inventing and trying some substitutes and the truth is that it is something I like.
A good bowl of salad has become my favorite, this morning has provoked me to eat a mixed salad of fruits and vegetables, for which I have prepared some steamed vegetables with other fresh fruits and vegetables, and the truth is that it has been a success, my mother has joined me with this delicious breakfast, also after a weekend eating sweets and getting out of the diet a little, it was necessary to start the week with something light and delicious so that the energies are renewed, the truth is that this type of salads are good at any time.
For this delicious salad use a fresh cauliflower, some carrots, tomatoes, onions, a delicious avocado and a little bit of chopped coriander. Preparing them is very simple, for this we need a steamer or a pot with some implement that allows you to steam, we put the cauliflower and carrots to steam for about 15 minutes and let it cool, while we chop the tomatoes, onions and avocado, and then mix everything and integrate.
a good dressing will always make our salads a star at lunch, for this one I used a little sweet mustard, lemon juice, a pinch of sugar, salt and pepper, the truth is that the result was great, too bad it's over, because if not this would have been my lunch.

Welcome to the Monday fun! We are happy to see you join us. Especially with such yummy fruits and veggies. I love a satisfying salad like this one. We have lots of cauliflower and leafy greens in season right now here, but I can't wait for fresh ripe tomatoes to come around to add that extra bit of flavor to my bowl! :)
