Intel and Amd companies have been competing in the market by bringing out "new processors" I say new in quotes because most of them are not, at the end of this post we will decide for one of these two.
Comparing quality and price I do not intend to be too technical in my words so that we all understand what is happening today with the processors for this occasion we will compare two high-end processors and the most current.

In the manufacturing process of this processor comprising the generation 11 series I5 I7 I9 They are basically the same chip only the purest with fewer imperfections during manufacture will be destined to be i9 and processors of poorer quality will become i5 and i7 is this level of purity that defines them after passing a series of tests that categorize them (cores that do not reach the ideal frequency among other factors), but all come out of the same machine and even the same production line.

AMD in its manufacturing process basically does the same as "Intel" in the base of the processor uses a chip called "CHIBLET" of Zen 3 and a separate chip for communications in the same way as Intel at the time of manufacture the best processors that come out of the tests will be destined to be Ryzen 7 5800X these processors have a clock frequency a little lower than Intel but that does not make a noticeable difference in performance in the least.

Now why don't I compare it to AMD's Ryzen 9, I'll tell you why, a Ryzen 9 is basically two Zen 3 Chiblet's on the same board, working in parallel allows this processor to have 16 cores/32 threads for a price of $1035 which doesn't make it fair.
In conclusion if you compare quality / price AMD wins the battle because for less money you get a high-end processor that is at the top of processors today, less money, less power consumption and basically the same performance in speed per core the choice is obvious but it is up to the buyer.
