It's lunch time and today I've decided to make a fresh and delicious salad that will give me energy for the rest of the workday. I start by washing the produce. The first thing I always do is rinse the iceberg lettuce leaves well under running water, then let them drain on kitchen paper. Then I cut the iceberg lettuce and chop it into small pieces, taking care to keep it crunchy.

Next comes the preparation of the chicken. I had some leftover meat from yesterday's dinner and decided to use it up by cutting it into small pieces. It is important that the chicken is well cooked and cooled before adding it to the salad.

Then I cut the avocado in half, removed the pit, and used a spoon to scoop out the flesh. I sliced ​​the avocado into thin slices. Avocado adds an incredible flavor to the salad, so I don't skip this ingredient.

Finally, the most enjoyable and easy part is seasoning. I took pure extra virgin olive oil and drizzled a few drops over the salad. The olive oil further enriches the dish and adds flavor without making it heavy on the taste. You can also add a pinch of sea salt and freshly ground black pepper for extra flavor, but that's a personal choice :)

Mixing all the ingredients together in a large bowl, I was careful not to crush the iceberg lettuce leaves too much. I also sometimes garnish the salad with a few slices of lemon for more freshness and color. Sometimes, when I have pumpkin seeds available, I add them too. For me, this salad is perfect for lunch, as it is light, filling, and full of healthy vitamins.
