Today I'll be preparing a nice meals for breakfast, rice and stew with ripe plantains.
I love keeping my harvested plantains to get ripe and then adding them in my meal because it adds another delicious taste and nourishes the body.
Also, I used papaya as a part of my stew along with tomatoes. I saw the papaya stew recipe online and I decided to give it a try and it came out really nice. I think I'll be using papaya along with tomatoes to prepare my stew from now😅
Here is my recipe
Rice (depending on quantity of people..I used 3 cups)
Tomato (I tin)
Papaya (a ripe one)
Spices (curry masala, Spicity, Hot pepper powder, Larsor seasoning)
One iced fish (optional..you can use beef or any type of meat)
Seasoning cubes
Onions (one bulb)
Ripe plantains
Groundnut oil (for stew)
First, I washed the rice and parboiled it.
Next, I peeled the ripe pawpaw, grated it and then use a sieve to filter some lumps that couldn't be grated well, then I added some water and boiled the pawpaw mixture after 15 minutes I sieve the pawpaw and kept it aside.
Next , I cleaned the ice fish, seasoned it and boiled it, then kept it aside.
I kept the tomato Tin sauce aside too for use later, sliced the onions and pepper, seasoning cubes.
The spices to be used were kept handy as well. Thses spices will bring out all the flavor needed to make the stew delicious.
I peeled the ripe plantains, sliced them and boiled them.
Then using the vegetable oil, I fried the papaya and tomatoes together, added my spices, pepper and salt to taste, the fish stick and then the fish itself and left it to boil for some 15 minutes.
Rice, stew and plantain is ready to be eaten.
