How to prepare low budget Afang Soup recipe

Afang soup is one of the Nigerian cusine that will always be cooked in any Nigerians home. It is a green leaf and is planted on a good fertilized soil which lifespan can take over ten years of planting.

Just like every other green leaf, afang is very nutritious to the body, it is rich in vitamins, fiber, calcium and iron. That's the reason it is good to consume healthy leafy meal.

In my state of origin, afang is the number 1 soup that is cooked in any occasion in my place. And it is liked by majority of people in my place.

There are different ways of cooking it depending on your choice of preparation. I could remember when I was a child, one of my uncle likes it so much that if he doesn't have all ingredients for the soup, he cooked afang with only waterleaf, oil, pepper and crayfish with seasoning to taste and he enjoyed it so much.

You can also cook it with melon without waterleaf, so many people have their own recipes but let me show you how I and my family enjoys afang soup.



Ingredients



  • Afang
  • Waterleaf
  • Meat (goat meat)
  • Fish
  • Stock fish
  • Perewinkle
  • Crayfish
  • Pepper
  • Palm oil
  • Cow skin (ikpa)
  • Salt to taste
  • Seasoning cubes to taste

Mis en place ingredients

Your ingredients especially the protein can be more than mine, you can even add snail and any other chewables you wish to add to make your soup enjoyable for you. Mine was a low budget Afang Soup.



Step of preparation



I wash and cut afang then pound it and keep aside, wash and chopped waterleaf and keep it aside as well. I also washed my meat, perewinkle, stockfish and ikpa and put aside for the cooking to begin.

First I steamed all the ingredients that needed to be steam, goat meat, stockfish and ikpa with seasoning, salt, pepper and onion.

After steaming for 5 minutes, I added crayfish to it as it will make the stock to be really tasty, add water and allow it to simmer for 2 minutes.

Next, I added palm oil to the pot and allow it to cook, palm oil is always one of the major ingredients in afang soup, I will be adding it twice before finishing the soup.

Next, I added crayfish, salt and seasoning cubes to taste then stir and cover the pot to cook for a minute.

Then I added waterleaf and cover the pot, at this point the waterleaf will simmer and produce water in the soup.

You can see the reason why water is not usually necessary while cooking afang soup, because waterleaf will do it job.

Finally, I added afang and palm oil then cover the pot to simmer for 2 minutes then stir and boom the soup is ready

Fresh afang soup is ready

It can be eaten with any swallow of your choice, it can be fufu, garri, oat meal, yam Poundo plantain swallow etc.

I ate mine with garri and it was supper delicious. You can prepare same for yourself as well anytime Andy day.
