My dear friend, I trust you are doing well. I am so happy to be a part of the contest that is organized in "Steel Iron Chef," which is a contest about Christmas meals. Indeed, Christmas is around the corner, and in my place, during the Christmas celebration, we do eat plenty of food to our satisfaction. In my home, we usually prepare different varieties of foods, of which I have my own favorite, which I will show you here.
My Christmas Meal
In Nigeria, rice is the major and most common meal that you can find in any home that you wish to visit during the Christmas celebration. In my home, we usually prepare different varieties of foods, of which fried rice and chicken are the ones that I consider the best.
Fried rice and chicken is the meal that I normally prepare in my home during Christmas celebrations. Fried rice is a very delicious food that is prepared with a variety of ingredients, which make it more nutritious for our bodies. Below are the needed ingredients.
Ingredients:
Rice
2 or 3 cups (356 g) of parboiled basmati, jasmine, or white rice
4 cups (118 ml) of chicken or turkey stock
Vegetable oil
2 onions (diced)
Carrot
Green beans
Salad
1/2 cup (128 g) of diced mixed vegetables
1/2 cup (128 g) of cubed beef liver (optional)
1/2 teaspoon (2.5 g) of thyme
Curry powder
1 stock cube
Salt (to taste)
Chopped scallions to garnish
Preparation:
Step 1: Combine all the seasonings and parboil the chicken and liver (a teaspoon of salt, a half cup of sliced onions, a teaspoon of thyme spice, a teaspoon of curry powder, two seasoning cubes, and a teaspoon each of powdered ginger and garlic).
After ten to fifteen minutes, check the meat for salt, then remove it and deep-fry it. Reserve the stock, please (meat and water).
Step 2: Chop the liver, cabbage, green beans, and carrot and place them in a large tray.
- This procedure is simple; all I often need is a knife, chopping board, or tray.

Step 3: Parboil the four cups of rice as well and simmer it with two cups of water and half of the meat stock (water from the meat) until it is about 70% done.
How to Prepare Fried Rice Using Steps:
Step 1: Vegetable oil should be added after putting your cooking pot on the heat and allowing it to dry.
Step 2: Let the onion slices cook for a few minutes before adding.
Step 3: After that, add the chopped carrots and green beans, whichever of these two goes first.
Stir in the chopped liver as well as the sweet corn.
- Add the green peas.
- Cook fried rice.
Step 4: Add the curry powder and cabbage after stirring for a few minutes. (Curry is a yellowish spice that gives fried rice its yellow hue; add and stir until you're happy with the color.)
When the flavor is to your satisfaction, mix in the green pepper.
Step 5: Stir everything together, cover the saucepan, and simmer for 5 to 7 minutes.
That is how fried rice is prepared.
