Today I have the pleasure to show you a simple recipe that I do at my restaurant with Green Papaya!
Of course we can do many other recipes with green papaya, like making a Thai Salad or simply cook them in a nice curry, but the one I do is for serving as topping on our burgers!
Favorite garnish on grilled chicken burger!
Since the day I started using it as topping , it became everyone's favorite! And earlier today I made another batch of green papaya compote/caramelized!
I used 3 pcs of green papaya as you can see below...
Peel them and take off the seeds inside...
Take off the green skin with a peeler...you need to wash the papaya after peeling as it will have a slippery texture and you can hurt yourself when cutting it in half...
Take off the seeds with a spoon...
Scrap all the seeds with the help of a spoon and wash the papaya once again to take off any 'milk' left on the fruit!
Finely grate and put to cook!
After grating the papaya, you will only need a pan, little oil, salt and pepper for the recipe!
I made it natural without any aromatic herbs, but you can add herbs like thyme, rosemary, basil etc...you can play around with different herbs and spices too!
Heat the pan and cook with little oil...
Season with salt and top up with lot of sugar...
All you need to do is put the fire on medium and let everything cook together until a nice caramelization of the papaya!
Ready...
It took around 30 minutes to be ready and after cooking I cooled it down and kept in our fridge!
Now when we have a burger to prepare, we just heat a little bit of the green papaya compote and use as topping!
This caramelized green papaya can stay up to 2 weeks in the fridge below 4 degrees Celsius!

Hola amigo!!! La verdad que la lechosa verde acá en Venezuela solemos realizar en dulce, sobre todo en navidad y semana Santa!! Es muy típico..
Pero que rica y novedosa receta nos as regalado topping para nuestras hamburguesas!! Algún momento lo intentaré hacer!!

Qué buena está receta para cuando preparamos hamburguesas aquí en la región por donde vivo se usa mucho para la elaboración de dulce mi esposa le encanta prepararlas mucho para los días de diciembre y compartir con amigos e familiares saludos
