Eggplants (Solanum melongena L.)
Eggplants are annual plants that grow from 50 cm to 150 cm high.
The stem is green, the flowers are lilac. Eggplant fruits consist of 92 percent water and therefore need a lot of water when watering.
The fruits are usually oblong-ovoid in shape, they can also be round or pear-shaped. They have an attractive black-purple color, and there are also eggplants in white color.
Madrid sort is an early eggplant variety (the variety I planted) is more oval in shape. The plant is strong with lush growth and its fruits reach a weight between 350g and up to 400g. You can see on photography how big is fruit compered to lighter. 😉
Let me share this very eazy and good recipe for delicious roasted eggplant:
For 1-2 people, we need 1 eggplant (310 g), a bunch of fresh parsley, 4 cloves of garlic and 8 tablespoons of olive oil.
How to prepare: first wash the eggplant well under water, cut off the front and back ends, on a cutting board, then cut it into millimeter-thick rings with a sharp knife.
Put a few tablespoons of olive oil in a pan and heat the oil.
Reduce the heat to a medium temperature and place the eggplant pieces in the pan and let them cook for a few minutes.
Meanwhile, chop the garlic and parsley.
Use a fork to turn the eggplants in the pan until they are browned enough.
When the eggplants are well baked, put them on a plate, add chopped garlic and parsley, you can the remaining olive oil over them if you like.
Mix everything well and the dish is ready.
