老妈很心念黄鱼鲞,其实她说的黄鱼鲞也不是黄鱼腌的,而是米鱼腌的。我给她在网上买了两条新鲜黄鱼,叫她自己腌制了再去蒸着吃,她说非常好吃,我打算囤个十几条放速冻里,想吃的时候提前两天解冻腌制。
准备食材:黄鱼、炒制盐、料酒、葱、油。
1)炒盐就是干净的锅里放入食盐,再放入八角桂皮花椒这些香料,开小火炒到盐也有这些香味为止。
2)腌鱼就是把凉了的炒盐均匀的抹到杀净的鱼身上,腌制一整天。
3)蒸鱼就是把腌好的鱼冲洗干净,码到盘里,淋上料酒,隔水蒸8分钟,撒上葱 淋上热油即可。
平时就父母俩人吃饭,一条鱼再加个素菜一个汤,这样两菜一汤吃得刚刚好,不会剩菜碗,不错的!
