第一次尝试做虾饺,没想到这么容易就成功了,馅是用虾肉和猪肉混合做成的,虾肉切丁,猪肉剁成肉泥,假如酱油胡椒粉和糖调味。虾饺皮要用小麦淀粉和木薯淀粉1:1的比例混合,再用等量的开水去烫面,最后揉搓成团,这种面皮的质地很容易操作,不粘手也很容易塑形,跟橡皮泥一样。把面团分成小剂子再擀成皮,可以擀得很薄。跟着网上的视频学包虾饺的手法,一次就学会了,最后馅不够了只能加点萝卜丝,但是爆汁了没包好。把虾饺蒸20分钟就好了,晶莹剔透的,外皮糯糯的,跟茶楼的一样。
