五粮液产于四川省宜宾市。五粮液酿造用水取自于岷江的江心,原料配比为:小麦31%,大米28%,高粱24%,玉米10%,糯米7%,制曲原料为小麦,曲的外形和制曲工艺较特殊,曲块中间隆起称为“包包曲”。成品曲霉菌生长充分,曲块皮薄并具有独特香气。发酵时使用陈年老。发酵采用跑酵法工艺,使用老窖,窖底为坚实的黄黏土,窖盖用柔熟的陈泥封平,部分酒发酵期可长达90天,五粮液风味独特,其特点是:“香气悠久,喷香浓郁,味醇厚,入口甘美,入喉净爽,各味协调,恰到好处。”
