The flavor of the green tea is depends on the environment that the tea plant is grow, example is it in and cool or hot , tropical or mountainous ,sand or seaweed.also the crop that the plant grows near may affect the flavor of the green tea, most importantly how they produce it.
The time of the year that the tea is being plucked and if the plants is treated with chemical or if they are grown organically, the types of heat that is applied to the tea leaves to stop oxidation also determine the flavor. But the common ways used to describe the flavor profile of the green tea include vegetal, sweet, grassy, buttery, lush, herbaceous and green.
the most important step in green tea processing are:
the plucking plucking is the harvest method use in the tea indusry.this is the picking of the leaves to ensure the quality and the taste of the tea, the leaves will carry from the garden to the factory for producing.
the leaves is spread on the floor to be cooled because of the accumulated heat.
After the leaves has been cool and regained freshness, they put it in roasting machine and process for about 20mins, then spread and allow to cool for the next processing steps.
Drying : the leaves must allowed to dry up for important purpose such as to stop the enzymatic and oxidation reaction.also drying gives a stable product that can be stored for a long period of time without any degradation.most importantly for green tea to have desirable characteristics such as flavor, color the roasted leaves are to put to the dryer for proper drying.
sieving and heated quickly using pan or steaming and then dried to prevent too much oxidation, these will turn the green leaves to brown and the fresh picked flavor will change. when it is brewed the green tea color will be yellow or light brown in color or most of it will be very light in color.
