Haitian Traditional Food

Many people regard the traditional dish Griot ak Diri ak Pwa (Fried Pork with Rice and Beans) to be the national food of Haiti. It is prepared with pork shoulder that has been marinated in a zesty concoction of oranges, lemons, limes, and epis (a spice mixture from Haiti), then cooked until soft and finally fried till crispy. It is frequently served with pikliz, a pickled cabbage salad from Haiti, along with rice and beans.
