We Americans have a tendency to overdo the frosting on our cakes.

Now, as a baker, I know how much frosting can improve a cake, and I enjoy it just as much as the next gal.

But there's something special about a sophisticated, understated cake served with only a cup of tea or coffee on the side.

With the apple bits, there's enough of flavor throughout and the cake stays moist without requiring frosting or glaze.
