Easy stir fried udon noodles: we got a bunch of marinated Korean bbq meats and cooked them in a pan. There was lots of delicious sauce/juice leftover in the pan so I made stir fried noodles in it:
- Prepare the vegetables: 2 cloves of garlic minced, 1 large carrot julienned, 1 c of bean sprouts, big handful of okra (I love okra! But I don’t usually cut it before cooking because it gets extra slimy when cut 😝)
- I used a packet of “fresh” (refrigerated) udon noodles. You can use dry noodles and cook them in boiling water first before adding to the stir fry
- Using the pan in which you cooked all that delicious kbbq, throw in the garlic and carrots, sauté for a minute or so, until fragrant and carrots partially cooked, then add the sprouts and okra
- Add the packet of udon noodles. Carefully separate the noodles with chopsticks or a spatula - let the noodles warm up a bit in the pan, they will become easier to separate
- Season with soy sauce, oyster sauce and pinch of sugar
- Throw back some of the cooked kbbq into the noodles!
