3 ingredient healthy chocolate

So I just got back from Mexico and wanted to make myself some raw vegan snickers bars. Raw vegan refers to foods that are not heated above 45 degrees and are in as close to their natural state as possible. Since I am having to quarantine for 10 days I realised ( at the final stage) that I don't have any maple syrup in, which is one of the key ingredients for the chocolate topping. I usually make it with coconut oil or cacao butter, cacao powder and maple syrup. I know you can get get coconut sugar raw chocolate but it's pretty lumpy but after a bit of research I found that you can use a coffee grinder to blend it into an almost flour like consistency so it's smooth!

It is actually probably the nicest chocolate I have made yet. I find it's best to adjust to your taste when making chocolate but I'll give you the rough process I used.

I began by melting 2 cups of cacao butter over a pot of boiling water, meanwhile I ground about 2 tablespoons of coconut sugar in a coffee maker (adjust the amount for taste, I don't really have a sweet tooth).

I then stirred in about 3 tablespoons of cacao, again adjust till you have a nice rich consistency that coats the spoon. You have to blend pretty well at this stage.

Then coat your cake or put into mini chocolate moulds and pop into the freezer to set :)
