This is one of my favourite healthy dinners that’s super quick and easy to make.
I thinly sliced one red cabbage and 4 carrots, then also thinly sliced some red grapefruit into a bowl.I know mine are not that thin but I’m not that patient! The thinner the better. Now I’m a bit of a throw things in a blender kind of person so I don’t have exact measurements but I added a cup of cashew nuts that had been soaked overnight, a small amount of oat milk, a tablespoon of apple cider vinegar, a couple of squirts of mustard, half a teaspoon powdered garlic and then seasoned with pepper and salt. I blended it all together and then mix it in with my cabbage, carrots and grapefruit. If you have walnuts they would be amazing to add I just didn’t have any in.
I ate it as a full meal but it makes a nice accompaniment to another dish. Enjoy 😊
