@soulfuldreamer told me she missed that I had mentioned her.
I did a test and it turns out that when you insert @Username in a tabbel, it is not caught up during Notification/Mentions
For the future, I will also write the usernames in the post itself and not just the tab so that it becomes visible on the Notification/Mentions page
