Those who live in Turkey, near the end of summer, know these preparations, preparations for consuming good nutritious foods in summer and in a healthy way in winter, and today's preparation will be a day when we will prepare canned tomatoes with tomatoes. 😊 Today we will prepare our canned food.
First we wash the tomatoes. If there are immature tomatoes, we cut them into a corner and wait for them to mature for a while. We need to peel the skin of the other tomatoes. There are several easy ways to do this. We cut the tomatoes with a knife and keep them in hot water in a pot. And then it gets very easy to peel off. Of course, we don't use the pots we cook normally because they hardly take 15 tomatoes 😊. This is done in large restaurant pots. After peeling the tomatoes, you can chop them to the size you want.
While my mother is doing this, she makes it in 2 varieties, one with only tomatoes, and the other with pistachios. We boil the chopped tomatoes by adding salt to it. If it's going to be peppery, we also throw both of them together and cook. We draw the water and boil it until it thickens and cook for an average of 1 hour.
Then we put it in our jars, close the mouth and turn it upside down to make a vacuum with hot air and leave it to cool. If it leaks when we turn it upside down, it means that it is getting air somewhere in the jar. Even though it is a tiring and challenging day, it makes people happy to have time to relax and cook delicious meals in winter.
