Method
Mix all the spices together except salt and pepper in a large glass container.
Put a piece of meat in it.
Mix the whole spice very well with your hands on the meat.
Wrap in plastic wrap and refrigerate for a whole day. Occasionally invert a little.
Take the meat out of the fridge one hour before roasting.
When it reaches room temperature, remove the meat from the marinade, then add salt and pepper.
