Yamakake Udon

Topping:
Chinese yam
Spring onion
Toasted seaweed
Egg yolk
Wasabi

Dashi stock:
1 kombu ( dried kelp )
1/2 cups katsuobushi ( dried bonito flakes ) 600 ml Water
3-4 dried anchovies (head, bone & guts removed)

Noodle Soup:
1 Tbsp mirin
1 tsp granulated sugar
1 Tbsp light soy sauce
1 tsp Kosher salt
Udon Noodles
