Chettinad chicken chukka is a scrumptious South Indian dish meticulously cooked using lots of small onions and spices. This recipe also added cashew nuts for a crunchy bite together with tender chicken.

as needed oil
2 cinnamon stick
4 star anise
1 tsp fennel seeds
2 tsp urad dal (ulunthu)
6 cardamom
8 cloves
6 tbsp cashew nut
10 dry chilies
8 stick curry leaves
1040 gram Small onions chopped (weight is after peel)
3 tomatoes chopped
6 tbsp ginger & garlic paste
Cook the below spices for 2 minutes: 2 tsp turmeric powder
2 tsp chili powder
4 tsp chicken powder
Add chicken to wok, pour water and salt . Cover and cook until soft. In between open and mix:
2 kg chicken
1 cup water
salt to taste
Add the below spices when the chicken is fully cooked. Cook them for 10 minutes in medium flame 2 tsp cumin powder 1½ tsp crushed black pepper
Lastly, add 1 cup of chopped coriander leaves.
