The ingredients used for Crispy Pata (deep fried pork legs)
For marination
Marinate atleast for 4 hours
Put water into a boil, add the star anise; spring onions; peppercorn; garlic, ginger and shallots; lemongrass; 2 pieces of bay leaves and lastly sprinkle some salt into it and over the shoulder for taste and good luck 😉
Once water is bubbling hot, add the pata (pork legs) in and let it cook for at least 2hours. I know it’s taking alot of time but trust me it’s worth the wait 😌

Take the pata out of the broth then air dry it overnight (this step is crucial before proceeding to the next step, which is the deep frying step)
