I made a couple of jars of candied kumquat. They are amazingly tasty! I like most citrus, so that's probably why I love them so much.
Step 1: PICK fresh, organic kumquats.
Step 2: CHOP 4 cups (I quartered mine), removing seeds (this is more a preference than a necessity).
Step 3: COMBINE 1 cup raw sugar, 1 cup raw, unfiltered honey, and 1 cup water in a saucepan, bring to boil, then lower heat and simmer for about 5 minutes (I added a couple of cinnamon sticks for fun).
Step 4: ADD chopped kumquat, bring back to boil, simmer for about 5 more minutes then strain kumquat thru a colander and replace liquid to stove and simmer a bit longer until it reduces and thickens (mine did not thicken too much more).
Step 5: PLACE kumquat in jars, pour reduced syrup over them and BOOM, you've got yourself a sweet item to accompany pork chops, put on top of ice cream, or eat straight out of the jar.
I sterilized my jars beforehand. I also refrigerated the jars after they cooled a bit. The recipe resulted in two, not quite full, 12-ounce jars of deliciousness.
