Quart of dehydrated violets
I got the last batch of violets done so my husband could mow the yard. Then I looked around for something quick to do, until it got warm enough to go out to plant onions on Thursday.
Chives are real quick: cut, rinse, snip to size, done. So I got my biggest colander and scissors and headed for the New Herb garden.
These chives were transplanted from the Big garden last spring. They are all the same type and had come from exactly the same area, and as you can see, went into all the same area.
But this year the ones on the right are as big or bigger than pencil size, while the ones on the left are standard size. No idea why.

I feed them to the chickens in the winter, lots of vitamin C and other good stuff. I already made violet jelly...

Expanding mine hasn't been an issue. Between the thyme and violets, there's not a lot of grass in a lot of places. I have put violets in flower beds and have 2 beds dedicated to them. But they are all over my yard.

That's a lot of violets, they looks so lovely! Our chives have not blossomed yet - can't wait.

I do miss chives! If ever you get to Asia you will laugh - we have something like a chive only it grows HUGE and the tubes are easily a full inch across. Oniony taste, albeit a bit chewier, and something I slice finely into stir fries. Loving that mist.
