Making Garlic Pickles

I had 15 large bulbs of garlic that had been damaged when digging them yesterday. They could not be cured and would not keep long in this heat. So I decided to make garlic pickles using the garlic scape pickles brine recipe. I love that brine and looked forward to having more.

I peeled and cleaned up the cloves, then sliced them into halves or thirds depending on size.

I heated the brine, sterilized the lids and rings and jars and set up my work area.

I loaded the jars and put them into the water bath canner. I heard a thump, but thought it was the lid being lifted by the steam, so I turned the heat down some. I processed them for 10 minutes.

When I took the cover off the canner, I discovered pieces of garlic floating around and an upside down jar.

The jar looked like someone had neatly cut the bottom right out of it.

When I lifted out the wire rack, I found the lid on it. There did not seem to be any little pieces of glass.

So I saved what I could of the garlic. Unfortunately, I had dumped the extra brine as I cleaned up while they were processing. So I will have to find another use for the garlic.

Sometimes jars just get old and stressed. You often cannot see these stressed places. So a jar will break when heated or cooled quickly.

I still have 2 pints of pickles so, it’s not all bad.

Yumm, I love pickled garlic! Looks good!
I have just used pickling vinegar, does the ACV make a difference in taste? I do like ACV too, just never tried it in pickling.

This is the first time I've made them, so I'll find out in a couple weeks or so....

Darn it on the broken jar. I hate when that happens! The recipe looks lovely.

I know! I/3 of my precious brine ruined! Oh, well....
