Colorchallenge| Wednesday Yellow: Chanterelle - So Tasty That You Cannot Pass By

Chanterelle is one of my favorite mushrooms, I literally love everything about it - a look, a taste, a smell and multiple possibilities to cook it . Geographically they grow all around the world, in some places more in some less, therefore density, popularity and culture sets the standard of the price in restaurants.
I plan to write a very detailed review about Chanterelle: how healthy they are, where exactly in the world you can find them, why would you prefer them to other mushrooms, but all that information in my future series about Chanterelles :)
Now I would like to share with you my Chanterelle catch at the beginning of Summer and a very tasty and simple recipe :)

What we need:

  • 500 g. Chanterelles;
  • 1 Onion;
  • 1 garlic clove;
  • a bit of dill, parsley or coriander;
  • salt & pepper;
  • olive oil and butter.

How to cook:

  • In the beginning we wash Chanterelle in the water to get rid of sand and other dirt;
  • Put mushrooms on the heated frying pan (don't add olive oil or butter yet, add some salt to get rid of the water faster;
  • Once we see water on the pan, we get rid of it. We might do it couple of time, until mushrooms are dry;
  • On a separate pan we cook fine cut onion and then add it to the Chanterelles;
  • Only now we add some olive oil and butter, mix it up and fry on the medium heat for 7-10 minutes;

  • At the end add some dill, parsley or coriander and fry for couple more minutes;
  • Now we are ready to it :) Simple, tasty and practical.

Some fine looking fungi, I'm always looking out for them to photograph but have an inbuilt fear of ever trying to harvest them - I'd be the one cooking the "wrong type"

I love mushrooms, but like yourself, these Chanterelle are ones of my favorites too. But they are so rare to find. I used to go mushroom picking every year when I was a little girl with my parents in Poland. It was so much fun.

As I have stated in post, I will write report on where they are most popular :) From my knowledge all Eastern Europe has plenty of them. One little tip, if you found Chanterelle somewhere, come there next year, they will be awaiting for you :)
