Making pumpkin soup

Hello steemit i know that Halloween was 2 days ago, but still i will share with you how to make pumpkin soup, because someone got pumpkin leftovers :)

Ingredients:
2 tbsp. Olive oil
2 onions
1 kg Pumpkin
700 ml Vegetable Stock
150 ml Cream
(also you can add chili pepper )

Process:

1)Heat oil in a saucepan. Add finely chopped onions and sauté till soft.

2)Add pumpkin and cook it until it softens and starts getting some color on.

3)Pour the stock in seasoning it with salt and pepper. Cook the entire contents of
the pan until the pumpkin turns squishy.

Add cream and bring it up to a boil

4)Empty the contents of the pan into a bowl and use a hand blender to puree it.
5)Pass it through a sieve for extra smooth consistency of pumpkin soups.
6)Reheat and add olive oil on top for garnish and pumpkin seeds.
