Today I decided to make a vinegar based pepper sauce from this year's Hybrid Thai Chiles. These babies are HOT.
So here's what you need if you want to make a delicious "Tabasco style" vinegar based hot sauce. Just an FYI, Tabasco ferments their peppers for up to 2 years for their sauce, I decided not to ferment this batch, but my next likely I will.
So I chopped up the peppers and 1 clove of garlic and put them in a pot and covered them in water.
After about 20 minutes of throwing capsaicin rich steam into the air, always adding small amounts of water, I added 3/4 of a cup of vinegar and tossed it all in the blender.
Then into the strainer to catch the pulp.
I stirred it around to get the liquids out and put the pulp in a little jar. I'll probably dehydrate it to make pepper flakes.
Then put the sauce in these cool little bottles I bought.

Thanks man. This stuff is insane hot. These peppers are hotter than habanero. Very hot sauce. I was going to order some Carolina Reapers, from PuckerButt, but after trying this stuff, I think I don't need to try the Reapers.
