Pickled vegetables ππ they are a side of every shawarma and hummus platter. In 1994 when i went to Moscow for the first time, our cook who was from Punjab asked me tussi khatte kheere khade neπ€π€ Gherkins he meant π. I got a verbal recipe from a local lady. Tried it yesterday came out fabulous.
Recipe
1/2 cup white vinegar
1 1/2 cup water
2 heaped tbs sugar
1 tsp salt
Few peppercorns
1/2tsp mustard seeds
Few sprigs of dil ( I didnβt have it)
Veggies of your choice, I used carrots, Chinese cucumbers, green chilies and garlic pearls.
One can use radish, beet root, cauliflower too
Boil, water vinegar sugar salt peppercorns and mustard. After a single boil take off the fire. First add carrots, after 5 minuets add cucumbers chilles and garlic stir . Cool store in a glass container. Will stay good for a week
