It seems to me that organic brown rice (which Lundberg also produces) is probably a much better food source for lactobacillus probiotic microorganisms, as organic brown rice is a prebiotic (food for probiotics), unlike refined rice that is not natural due to processing (even if it is organic), and also because refined rice (like refined flour and refined sugar) is food for non-probiotic microorganisms.

There is a specific reason not to use brown rice. I forget exactly what it is lol. Probably not enough starch. I was taught knf is a specific process much like a symphony. My teacher warned that the microbe collection may not be as diverse. In fact maybe because of the prebiotics in brown rice might suppress the diversity. I also dont see many people using brown rice to grow mushrooms either... Now jadam is by Master Cho's son... My teacher called it the rock n roll of the natural farming world!
