This is an introduction to a new platform on steemit called steemit cook book.

The Idea behind steemit cook book! 


I am the second daughter out of four that my mum has. Usually my birthday happens to be in summer and sometimes i tend to imagine how it was when I was given birth to. Imagine when when mum got pregnant with me in the middle of July in a temperature approximately 110 degrees (not sure anyways, just exaggerating) and am pretty sure it was one of her miserable moments. 

Guess what, she however told me in my last birthday that she drank strawberry milkshake when I was born. And she did however, cos during my last birthday she drank it and anytime i tend to make anything out of it, I think about her. 

I believe we should sometimes view steemit from a different perspective, money is what drives many of us to steemit, but, how about sharing our different cultures, beleives, food,etc to one another here. 

That takes me to creating a platform where we can all showcase our different delicacies on steemit. 

You will agree with me that we all love food,but ,what do you think someone else  is eating over there in china, Venezuela, Hong Kong, Philippines, Nigeria, Kenya etc. 

Or, what if you visit these places, what will you be taking as food when you finally arrive.

These are simple questions that the answers will be given right here in steemit cook book.

Strawberry milkshake cupcakes.

I  will share some thoughts about this delicacy and also introduce you to how it can be made.

These strawberry milkshake cupcakes are actually from Hayley's(the domestic Rabel) new cook book. All recipes in her cook book start from a box of some sort. 

It is simply a cake mix, a pudding mix, refrigerated cookie dough, etc. Well, some of us may fortunately be from scratch bakers but, i'm all about a little semi-home made action going on. 

Trust me it's just as good with half the work. 

Sometimes, I tend to believe I had an original idea of a recipe, then i googled it, gues who came up first as already making it? Hayley. 

She's so innovative and I guess the idea of a cook book in steemit has a greater inspiration from her.  

For Today's Recipe; 

Full disclosure; Hayley's recipe calls for a box of strawberry pudding mix. I couldn't find it anywhere, so I had to look for a strawberry jellow mix which is likely an alternative and it still gives the ultra strawberry flavor. 


Strawberry Milkshake Cupcakes

Servings: 18

Ingredients

Cake:

  • 1 (16.25 ounce) strawberry cake mix
  • 1 1/4 cups buttermilk (see note for substitute)
  • 1/2 cup oil
  • 3 eggs
  • 1 (3.4 ounce) box dry instant strawberry pudding mix or 1 (3.0 ounce) box strawberry jello mix
  • 1/3 cup strawberry milk drink mix (such as Nesquik)

Frosting:

  • 1/2 cup butter , room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry milk powder (such as Nesquik)
  • 3 1/2 - 4 cups powdered sugar
  • 1/4 cup heavy cream or milk (may not use all of it)

For topping:

  • strawberry candies or gumballs

Instructions

  1. Preheat the oven to 350 degrees F. Line 18 muffin cavities with paper liners. Set aside.
  2. In a large bowl, beat the cake mix, buttermilk, oil, eggs, dry pudding mix, and strawberry milk drink mix together with an electric mixer for about 2 minutes or until blended. Distribute the batter evenly among the muffin cups, filling until about 3/4 cup full.
  3. Bake for approximately 15 to 18 minutes or until a toothpick inserted near the center comes out clean or with moist - not wet - crumbs. Cool completely.
  4. For the frosting: In the bowl of a stand mixer, cream together butter, vanilla, and strawberry milk powder together until creamy and smooth, about 2 minutes.
  5. Gradually add om the powdered sugar, about 1 cup at a time, until frosting is light and fluffy. Add in the cream or milk one tablespoon at a time if the frosting is too thick.
  6. Spread or pipe frosting onto cooled cupcakes. I used a Wilton 2D tip. If piping the frosting, you may want to double the frosting recipe. Top with strawberry candies or pink gumballs, then serve.
  7. I kept mine in the fridge because I did notice that the frosting gets soft at room temperature.

Recipe Notes: 

Hayley's recipe calls for a box of strawberry pudding mix. I could not find it anywhere. I ended up using a box of strawberry Jello mix which still gave it ultra strawberry flavor. I do think if you are able to find strawberry pudding it would be fantastic and make the cupcakes super soft.

Buttermilk substitute: 

For every one cup of milk add about 1 teaspoon of lemon juice and let mixture sit for 5 minutes.
