Ingredients - carbonara paste:
1 kg of spaghetti or the pasta they prefer.
1 tablespoon of olive oil
8 slices of chopped bacon
1 clove of garlic, chopped
1/4 cup dry white wine (Optional)
4 eggs
1/2 cup grated Parmesan cheese
1 pinch of salt and black pepper to taste
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese
Mode of preparation - carbonara paste
In a large pot with water, add salt and cook the pasta spaghetti until al dente
Drain the pasta well. Mix with 1 tablespoon of olive oil and reserve.

Meanwhile, in a large skillet, cook the chopped bacon until lightly crispy; Remove and drain paper towels
Reserve 2 tablespoons of bacon fat; add the olive oil, a remaining spoonful, take it to the fire in a large pan
Add the chopped onion and cook over medium heat, until the onion is transparent
Add chopped garlic and cook another minute
Add the wine if you wish; and we cook another minute. We take the bacon to the pan, add the cooked and drained spaghetti.
Mix well, add more olive oil, clean it if it looks dry and sticks
Add the beaten eggs and cook, stirring constantly with tongs or large fork until the eggs are almost cooked
We quickly add half a cup of Parmesan cheese and keep mixing
Add salt and pepper to taste. Serve immediately with chopped parsley, sprinkling on top and additional Parmesan cheese on the table.
