This is a favorite Kapampangan food which is now being served on a fast food place. Fastfood place like Jollibee and Mang Inasal are the ones who started adding this local favorite into their menu. This rice noodle is what we call pansit Luglog in our dialect and other regions call it Pansit Palabok. Pansit refers to rice noodles, Luglog if I get it right means a quick wash or a quick cooking using hot or boiling water. That pretty much tells us how quick the process of cooking is although most will cook it just like how you cook your pasta. Going back to the other name Palabok means the sauce you put on top. They call it so because the sauce gives it a distinct flavor that is deliciously creamy and or nutty and sometimes could be smokey depending on the ingredients you put in. The noodles are the typical cooked rice noodles topped with a sauce, boiled eggs, shrimp, pork, chicharon or pork rinds and a squeeze of calamansi or a local small lime fruit.
