I'm attempting the Keto diet lately, hopefully to lessen my gastro troubles.
So tonight, I made quesadillas, and here's what I did.
We need Keto tortillas so here's what I put together.
1 cup almond flour
1 tbsp xanthan gum
1/2 tsp baking powder
1 tbsp water
1 egg
So mix all that up into a small dough ball and let stand for at least 15 minutes, in order to allow the xanthan gum to work.
After 15 minutes, cut the dough into 4 pieces
Roll out the dough pieces between parchment paper using your favorite locally sourced mead bottle
Then we cook them in a hot skillet for just a short time.
Then I made quesadillas with beef, bell pepper, green onion and tomato and cheese.
So now for the verdict. This doesn't taste as good as a corn tortilla, but it's OK. I'll modify the recipe next time to add some salt and stevia, I think that would make them taste a bit better.
