Biscuits, drop
• 120g (1 C) Almond flour - blanched - super fine
• 1 tsp xanthan gum
• 3/4 tsp baking powder
• 1/2 tsp salt
• 2 Tbsp shortening or butter
• 1/2 C water
- Preheat oven to 450.
- Blend all dry ingredients well.
- Cut in shortening until mix resembles coarse corn meal and no large pieces of shortening remain.
- Add water and mix well. Let mix rest about 2 minutes.
- Divide batter into four portions.
- Drop divided portions onto greased or parchment lined baking sheet.
- Bake about 15 minutes.
- Remove from oven and cool on baking sheet. Do not try and remove from baking sheet until cool as they will crumble into tiny pieces.
It is best to weigh almond flour when possible for consistent results.
Sausage Gravy
• 8 oz Ground sausage (6 oz precooked)
• 1 c water
• 1 c heavy whipping cream
• 1 tsp xanthan gum
• 1-1/2 tsp black pepper, ground
• 1/4 tsp salt
- In a large skillet, brown and crumble the sausage over medium-high heat until it is cooked through.
- Add xanthan gum, black pepper, water and cream.
- Bring to a simmer, reduce the heat to low, and continue to simmer about 2 to 3 minutes or until the gravy is becomes moderately thick. Be sure to stir frequently to prevent scorching.
- Remove from heat. Gravy will thicken some more as it cools.
