The caramel tree, whose scientific name is cercidiphyllum japonicum, is a species of flowering tree in the cercidiphyllaceae family.
Also called katsura (from its Japanese name), it comes from China and Japan.
The leaves grow singly on short shoots and in pairs on long shoots. They are round with a heart-shaped base and crenate margin.
The leaves are larger on the short shoot, but smaller on the long shoot.
In the fall, the leaves turn pink and yellow and sometimes have a distinctive fresh caramel scent.
