Sage, with the scientific name salvia officinalis, is an evergreen subshrub with woody stems, grayish leaves, and blue to purplish flowers.
Also called common sage, it is a member of the lamiaceae family, native to the Mediterranean region.
The leaves are oval, wrinkled on the front, greenish gray, and almost white underneath because they are covered with fine hairs called trichomes.
In England, sage has long been an important herb along with parsley, rosemary, and thyme.
