Ingredients :
1 fresh tuna fish
1/2 bunch of basil leaves (take the leaves)
2 pieces of green tomatoes (cut)
1 egg
3 lbr leaves (cut into 3 pieces each)
7 whole cayenne pepper
to taste banana leaves
to taste Salt, sugar, powdered broth
Ground spices:
15 curly red chilli
8 cloves of red onion
5 cloves of garlic
Slightly small turmeric
3 candlenuts
Steps:
Rinse fish, spices and basil leaves. Blend marinade with a blender or diuleg. Then steam for a moment the tuna fish, suwir-suwir rather large.
mix the tuna fish with spices, basil, tomatoes and eggs. Add salt, powdered broth and granulated sugar. Mix well. Taste test.
Wrap pepes with banana leaves. Give roughly 2 spoons per pack or adjust to the seption. add 1 whole cayenne pepper and 1 bay leaf each packet.
Steam for about 30 minutes. Turn off the fire. Serve with warm rice.
Can also after steamed baked again above teflon to reduce water content and certainly more delicious
so special Pepes Tongkol Suwir Basil that I have to try tomorrow
