Today was tough physically. After having let it go for far to long, I finally needed deal with it. When it was young I banded it so it would not grow up to be a giant douche which helped him grow nice and big. I am tired of paying for feed/hay for him, so it was time to go in the freezer.
As would have it, I neglected to shear him for far too long so I had to work extra hard to get the fiber removed. We have professional shears but even they had a hard time with the natty, matted dreads. Wife watched the kids while I worked, but that made for a tough job keeping him from bolting and still being able to shear. I am not that skilled at it, but I can do it.
I skinned and gutted, removed legs, skirts, and straps. Once that is all off the carcass, there is little meat left to worry about. I ended up with 50 pounds/22 kilos of meat when all is said and done. Now time to get a cold beer and the charcoal going in BBQ so I can grill some fresh back strap and veggies for dinner.
I have one more to butcher so if people want, I can do a video or pics of butchering process.
