You're point about big actors being shot separately reminds me of an interview of Jeff Daniels where he said that for the first week of Dumb and Dumber, all the scenes were his scenes and none of them were with Jim Carrey, apparently, they still weren't sure if they wanted him for the part so they did all of his scenes first so that it would be easy and cheap to replace him.
