Hi steemians, yesterday i visited an awesome place in my country which named Kairouan...So i share with you my best moments from the road until the arrival ...
The day started raining
Kairouan received me with a pretty rainbow..

Impossible to pass through Kairouan without eating a few makrouds. I went to ask for explanations on the recipe in Najah, responsible for production and quality control for Patisseries Segni, a company opened for 50 years.
For the receipe:
- 1/2 bowl of wheat flour
- 1 bowl of fine wheat semolina
- 1 C. with bicarbonate
- some water
- 1 bowl of olive oil
For the syrup:
-Water
-Sugar
-Citric acid.
Mix the semolina, the flour and the bicarbonate, pour the oil gradually and then the water to obtain a homogeneous paste. Then spread it on a flat surface in the form of a strip and filling it with paste of dates that you can mix with aromas if you wish.
Form lozenges and fry in hot oil.
Once cooked, immerse the makrouds for a few minutes in the syrup.
Have a good meal !

When you climb the stairs straight up to a small dome you find a well and a camel turning attached to a noria (wooden water wheel) up the deliciously refreshing water gullies served in a "hallab".
This well was built by the Governor Abbaside of Ifriqia (North Africa) Harthama Ibn El Ayoun in the year (796 AD - Period of the famous Caliphe Abbaside Haroun Errachid) near the Souk of Kairouan.
It is this same Harthama who built the Ribat of Monastir.
The present building dates from the Muradite period (Mohamed Bey Ibn Mourad 1690 AD)
The legend says that "the water of Barrouta communicates with that of Bir zem zem (sacred well at Mecca)
The rural woman wears the "Earring" in her ears for decoration since ancient times,for symbolic captions:
A single girl wears a small earring as in the picture,
while the married woman wears a large one that puts it over her ears from above. When she gives birth she adds chains according to the number of their children. El Khomsa (the hand) symbolize the girl while the moon symbolizes the boy in the traditional rural occupations.
The earring contains two capsules right to save a manuscript of Surat Al-Falaq to save them from the eye and the other to save a copy of her marriage contract so as not to be lost while traveling.
And El Khomsa also signification for the rural women to save from the evil eye, it represents the palm of the hand and symbolizes the pillars of Islam five and five prayers and five ribs of the star and five verses of the Koran and the five fingers open symbolizes the name of God and hand to greet peace so they say"khamssa and Khamissa" and The Jews would say, "No, your eyes are a diversion."
