The ancient Roman physician, Galen, wrote about pancakes in his medical texts over 1.8 thousand years ago. His work provides insight into the culinary practices of that time, as documented by the British Museum.

The ancient Greek poet Hipponax also mentioned pancakes, describing them as being “stuffed with sesame seeds.” This highlights how pancakes have a long history in various cultures.

To prepare pancakes like those of the ancients, you will need just a few ingredients. Begin by mixing together flour, water, and one tablespoon of honey to form a smooth dough. Heat two tablespoons of oil in a frying pan over medium heat.

Once the oil is hot, pour in a quarter of your dough mixture into the pan. Allow it to cook until the edges begin to firm up. When the pancake is set, turn it over. Flip it two or three times to ensure it cooks evenly and develops a nice golden color.

Repeat this process three more times to make a total of four pancakes. Once all the pancakes are cooked, serve them warm. Drizzle the remaining honey over the top of the pancakes and sprinkle sesame seeds generously.
